Position Summary: We are seeking an innovative, highly experienced Head Chef to take the helm at Spirits Hall. The ideal candidate will have a profound respect for historic Louisiana recipes, a mastery of Cajun and Creole techniques, and the vision to deliver a high-end, 5-course dining experience. You will oversee all daily culinary operations for our inn guests (breakfast, lunch, and dinner) as well as execute flawless menus for private groups, conferences, and weddings.
Key Responsibilities:
- Menu Curation & Execution: Oversee the preparation of our staple dishes (Seafood Gumbo, Fish Pontchartrain, Fried Bread Pudding) while bringing creative, upscale specials to the table (e.g., Seared Scallops with Pineapple Salsa, Roasted Duck Breast with Grand Marnier Glaze).
- Kitchen Leadership: Hire, train, and mentor the Sous Chef, Chef Assistants, and front-of-house staff to ensure a seamless, high-end dining experience.
- Catch-and-Cook Mastery: Expertly process, prepare, and plate fresh fish caught daily by our guests and fishing guides.
- Event Management: Design and execute high-volume, impeccable catering for weddings, corporate retreats, and special events hosted at Spirits Hall.
- Sourcing & Inventory: Maintain relationships with local purveyors for fresh Louisiana seafood, produce, and meats. Manage food costs, labor costs, and kitchen inventory without compromising on quality.
- Quality Control: Ensure all health, safety, and sanitation guidelines are strictly followed.
Qualifications:
- 5+ years of experience as an Executive Chef or Head Chef in a fine-dining restaurant, high-end lodge, or luxury boutique hotel.
- Deep, demonstrable knowledge of Cajun, Creole, and classic Southern cuisines.
- Proven ability to manage high-pressure services, from multi-course plated dinners to large buffet-style wedding receptions.
- Exceptional leadership, communication, and organizational skills.
