Job Overview
The AM Culinary Supervisor is responsible for leading and coordinating all morning kitchen operations, ensuring seamless execution of breakfast, lunch, banquet events, and outlet service. This role serves as the operational bridge between the Banquet Chef and Sous Chef, driving communication, service flow, food quality, and team efficiency while maintaining culinary standards and food safety compliance.
The ideal candidate is a hands-on leader who thrives in a fast-paced environment, can effectively direct kitchen staff during service, and possesses strong organizational and communication skills.
Duties
Supervise daily kitchen operations, including food preparation, cooking, and plating to ensure consistency and quality.
Lead and motivate culinary staff by providing clear direction, training, and support to foster a collaborative team environment.
Oversee inventory management and control to minimize waste while ensuring all ingredients and supplies are available for smooth operations.
Plan menus in collaboration with the culinary team, considering dietary restrictions, guest preferences, and event requirements.
Maintain strict adherence to food safety standards, sanitation protocols, and health regulations across all kitchen activities.
Coordinate with catering and banquet departments to execute large-scale events seamlessly from setup through service.
Manage shift schedules, monitor performance, and address any operational issues promptly to ensure efficient workflow.
Experience
Proven supervisory experience within a culinary or food service setting, preferably in fine dining or banquet environments.
Extensive culinary background with strong skills in food production, preparation, and presentation.
Experience managing inventory control systems and implementing effective food management practices.
Familiarity with dietary department procedures and accommodating special dietary needs.
Demonstrated leadership abilities with a focus on team management, training, and conflict resolution.
